Sponge Cake

 140 g almond powder
 10 g psyllium powder
 30 g butter
 6 eggs
 70 g stevia
 ½ tsp salt
 1 tsp baking powder
 1 tsp vanilla extract

Preheat the oven to 180 ° C.

Place a sheet of parchment paper or grease the baking dish.

Melt the butter and set aside.

Mix together the eggs and stevia until a light and frothy mixture is obtained.

Add vanilla and salt and mix again.

Mix 3 tablespoons of the mixture with the melted butter and then reincorporate with the whole mixture.

Mix almond flour, yeast and psyllium powder together and gradually add to the previous mixture (if possible, use a strainer to limit lumps).

Pour the mixture into the pan and cook 25 minutes [/ cooked-timer] until a golden color is obtained.
If you are preparing cupcakes, cook 15-20 minutes.
