 125 g almond flour
 25 g psyllium husk powder
 8 g xanthan gum
 3 g baking powder
 2 eggs
 30 ml warm water

Mix all the dry ingredients together.

Add the beaten eggs and hot water. Mix until a homogeneous ball is obtained.

Divide the dough ball into 6 (about 45 grams per portion). Flatten them as finely as possible between two sheets of baking paper (about 2 mm thick). Use a bowl or a small plate to obtain even circles. Note that the larger the circles, the more difficult it will be to cook it without drying them (it will be more difficult to fold them). By reusing the excess cuts, it is possible to make 8 tortillas.

In a non-stick pan, cook the tortillas for about 2-3 minutes on the first side until lightly browned (be careful not to brown the edges too much as this will crack the tortilla when folded. ). Turn them over and cook for about 15 seconds on the second side.

Enjoy with the garnishes of your choice. If the tortillas get too dry, you can moisten them slightly and microwave them for a few seconds (the steam will make the tortilla pliable again).
