Pork Sisig

 500 g Pork Jowl or Pork Belly
 2 cloves Garlic
 1 Onion
 5 g Red Bellpepper, chopped finely
 2 tsp Ginger, minced
 5 g Spring Onion, chopped finely
 2 tbsp Mayo
 1 tbsp Butter
 ½ cup Olive Oil
 1 tbsp soy sauce or coco aminos
 Water
 2 Eggs
 1 Lemon, sliced

Boil Water in a big pot,make sure that the water will cover the whole meat.Add pork jowl or pork belly then simmer for 40 minutes or until tender. (other option is to pressure cook the meat).Season with pepper and salt.

Remove and drain the boiled meat.

In a pan, heat oil in medium heat. Add the meat and fry until cooked. (other option is to grill the meat until cooked or you can do both for a juicy and crispy sisig)

Finely chopped the meat into diced.

In a bowl, Place the chopped meat then add onion,garlic,ginger,bellpepper,mayo, soy sauce and mix everything. Season with pepper and salt to taste.

In a sizzling plate or a flat pan, place butter in medium heat then add the mix ingredients and slightly stir until cooked.

Garnish with raw egg on top ,sliced lemon and sprinkle the spring onions.

Serve while it's hot.Enjoy!
