In a large mixing bowl, place the ground pork.
Add carrots, red and green bell pepper, onion, pickle relish, mozzarella cheese, almond flour. Mix thoroughly.
Add pepper, salt, garlic powder and raw eggs then mix it well until combined.
Place the meat mixture in an aluminum foil and press to flatten it.
Place the sausage and sliced egg in the middle of flattened pork mixture. For other fillings replace sausage with cheese.
Roll carefully the foil mixture to form a cylinder and twist the ends of the foil to lock and to make it more compact
You can pressure cook it for 10 minutes. Steam cook for 50 minutes to & hour. Other option is to fry the embutido rolls.
