Fried Cauliflower Rice

Yields4 Servings

 1 head Cauliflower
 250 g Bacon tidbits or Chicken Breast , ground or chopped finely (optional)
 1 Onion,chopped finely
 23 cloves Garlic,minced
 ½ cup Carrot ,diced
 Spring Onions, chopped finely
 2 large eggs
 1 tbsp oil
 2 tbsp soy sauce ( coco aminos)
 pepper
 salt
HOW TO PREPARE THE CAULIFLOWER:

1. Remove the leaves and separate the large head into florets.

2. Cut florets enough to put inside the prcessor.

3.Use the food processor to grate or if not available you can use grater ( sliced cauliflower largely)

HOW TO COOK:

In a large skillet in medium heat, Add oil and saute bacon for 3-4 minutes.

Add garlic and onion, carrots saute all together and saute until tender.

Set aside vegetables mix to the side of the skillet then add eggs and scramble the eggs until cooked, mix everything.

Add the grated cauliflower and add soy sauce,pepper and salt. Stir and combined well until heated through.

Add chopped spring onions and serve with other keto dishes. ( best with egg and adobo)
