Keto Almond based waffles

 120 g Almond flour
 15 g Peanut flourOr almond flour
 250 ml Heavy whipping cream
 15 g Erythritol
 6 Eggs
 1 tsp Baking powder
 100 ml Sparkling water
 1 tsp Vanilla extract
 1 tsp Xanthan gum
 1 Pinch of salt

Mix together all the ingredients except the flour, yeast and sparkling water.


Mix together the flour and yeast and incorporate into the preparation.


Add the sparkling water and mix again.


Leave to rest for ten minutes. The dough should thicken and become gelatinous because of the xanthan gum.


Heat your waffle maker. Cover the waffle plates with oil if necessary.


Bake your waffles like classic waffles.
